You need a better option than cooking from scratch every night

My dream is for you to gracefully, flexibly and joyfully get a nourishing, cooked from scratch dinner on the table each night (and at the moment ALL meals, not just dinner! 

(Ok, it won’t be all rainbows and unicorns, but let’s dream big). And while there will be days when you have the headspace to start and finish a coherent dinner, most days you will need to work more flexibly than that. 

You’ll have produce that needs to be used up, there will be leftovers that want eating, you don’t want to deal with going to the shops, or you just can’t give your full attention to cooking (#motherhood).

And while having ideas for simple dinners is VERY useful, I realised that just offering you one idea for a meal is less helpful if I don’t explain the strategies I use to cook. Otherwise, you’re back where you began… looking for recipes, cooking every night, and never quite getting ahead. So let me explain: 

Just be like her, you tell yourself

Imagine this: You’re talking to that super organised friend who loves meal planning. She tells you that meal planning is what keeps her on top of her cooking. It lowers her grocery bill, it means she doesn’t have to think about dinner during the week, and basically it means that there are unicorns galloping around cleaning her house for her. You get the gist. Everything is perfect because she meal plans. 

So you try it. And yes, it is pretty awesome, and everything she said is true (minus the unicorn part). But there is a problem, and you feel that that problem must be you, because you JUST CAN’T STICK TO IT! Hands up… is that you? It’s definitely me. 

And while there is absolutely a need to plan ahead (to a degree), I have fine tuned three strategies that also give you that much needed flexibility and freedom in your life, which we need more than ever at this strange time!
